An enchanting setting and incredible service

On the first floor of Hôtel L’Atlantic, Aurélie and Benjamin Delpierre transport their guests to an enchanted and indulgent forest, protected by two large golden trees and a blend of warm colours. Of course, during the day, all eyes are on the panoramic views of the beach, where the waves move inexorably towards the beautiful Côte d’Opale. But when night falls, diners are captivated by the restaurant’s Art Deco style, wooden accents and a midnight blue shade which create a wonderfully soothing setting.

With music playing softly in the background, the restaurant’s staff are attentive but never imposing, standing back but letting diners know they are there to help. Explanations and remarks are brief but sincere, spontaneous yet unassuming. La Liégeoise provides a level of customer service which is rarely seen, even in Michelin-starred restaurants. Michelin-starred cuisine

Perfectly unambiguous yet remarkably creative, the cuisine prepared by Benjamin Delpierre and his team will delight diners who are keen to enjoy dishes which make the very best of fresh, seasonal ingredients, without any exuberant displays of technique but with profound respect for everything the local region has to offer.

The chef’s dishes display a degree of freedom, a certain audacity at times, and, above all, a determination to avoid the easy option. Although he has a thorough grasp of French haute cuisine, the chef admits that he doesn’t want to serve a “signature dish”, preferring instead to question himself and to develop his Michelin-starred cuisine, driven only by a desire to create real quality.

Mindful of just how lucky he is to have one of the world’s largest sources of produce outside his window and a lively market nearby which he visits every morning, the chef is constantly looking to be inspired by his discussions with other people and to see how new ideas emerge. For instance, he supports the young market gardener who has just set up business next door to the hotel in Wimereux, has become a partner of an agricultural collective on the Côte d’Opale and plays a key role within the local ecosystem.

When it comes to sustainable cuisine, Benjamin says that his approach has always been inspired by common sense, from recycling to reducing waste and finding environmentally friendly solutions. Buying the right amounts, diligently preparing ingredients, cleverly managing waste: to Benjamin, these are all natural choices.
